Five days in the heart of the Roman Sabina, where time passes slowly between silver hills, paths of history and the scent of good earth. Small groups, calm, and care.
Day 1. We meet you at Fiumicino and drive into the Sabina. The first stop is one of the family olive groves: local food, the extra virgin oil pressed from this land, and the manual techniques behind the green gold. Dinner in a village, with a selection of local wines.
Day 2. Farfa Abbey, founded in the sixth century, and the village that grew inside its walls. Lunch of pasta alla sabina and porchetta, then the most striking villages of the Sabina Reatina, and dinner cooked to local recipes.
Day 3. The monasteries of Subiaco: the frescoes, the views, the history of San Benedetto. Subiaco is also where Gina Lollobrigida was born. Lunch with a touch of river fish, dinner with a tasting of wines and cheeses.
Day 4. The Aniene Valley Nature Reserve, with paths through the woods, clear water and wide views. Lunch in a farmhouse with organic, zero-mile ingredients. Dinner is a tribute to meat, cooked the way tradition asks.
Day 5. Tivoli. Villa d’Este and its fountains, Villa Gregoriana in the green, Villa Adriana. No description does them justice, which is exactly why you go. Farewell dinner in Montelibretti, with Sabine wines and products.
Every evening you come back to Montelibretti, to the family B&B among the olive trees. If you have not rented a car, the transfers are ours, from the airport and back to it.
You arrive as a guest. You leave with the taste of a place most people drive past on the way to Rome.

For years, he ran a marketing agency in Rome. Everything changed when he moved to the hills of the Roman Sabina and discovered a landscape where olive trees had shaped both the land and the people for centuries.
At the same time, his daughter Julia was studying environmental science and architecture in the United States.
When she returned home, they both realised something alarming.
The groves that had defined the Sabina for generations were slowly disappearing: climate change had made harvests less predictable, production costs kept rising, young people were leaving the countryside, and for many families, continuing simply no longer made economic sense. Libellula was born as a response to that reality.
Not simply to produce olive oil, but to create a model that could make preserving these groves economically sustainable again.
Today, Libellula works with a network of small family growers around Palombara Sabina, helping preserve both the landscape and the knowledge behind it.
Their olive adoption programme allows people to support the restoration of abandoned groves, while every bottle reflects the same philosophy: olives harvested by hand, grown without pesticides and pressed within twenty-four hours of harvest to preserve the freshness, vibrant flavour and naturally high antioxidant content of the fruit.
In recent years, the family has also opened the doors of their home, welcoming just five guests at a time to experience the Roman Sabina through its olive groves, abbeys, imperial villas and slower rhythm of life.
